Chili con Queso Dip
Traditionally, this spicy Tex-Mex dip is meant to be served with square queso chips, but tortilla chips or Baked Pita Chips work just as well.

Cooking time: 7–10 minutes
INGREDIENTS | YIELDS 1¾ cups
- ½ cup Monterey jack cheese
- ½ cup cream cheese
- ½ cup canned diced tomatoes
- ½ teaspoon onion powder
- 2 tablespoons jarred red chili peppers
Combine all the ingredients in a medium microwave-safe bowl, stirring to mix everything together.
Microwave on high heat for 3 minutes. Stir and microwave for 1 minute at a time until the cheese is melted. Stir again before serving.
Skillet con Queso
Don't have a microwave? This tasty dip can also be prepared on the stovetop. Replace the onion powder with ¼ cup chopped onion and sauté with the chili peppers in one tablespoon of olive oil, until the onion is softened. Add the tomatoes, heat to boiling, and let simmer for 2 minutes. Top with the cheeses and cook over low heat until the cheese is melted. You can also load up the dish with one diced green bell pepper.
