Beef Ciabatta

Italian for “slipper,” ciabatta is a fat, oval-shaped bread with a distinctive flavor that is reminiscent of sourdough bread.

Preparation time: 10 minutes
Cooking time: 10–12 minutes

INGREDIENTS | SERVES 6

  • 1 loaf ciabatta bread
  • 2 tablespoons vegetable oil
  • ½ pound chorizo or andouille sausage, sliced
  • ½ red onion, sliced
  • 1 tomato, thinly sliced
  • ½ cup sliced fresh mushrooms
  • ½ red bell pepper, cut julienne-style
  • ½ cup shredded mozzarella cheese
  1. Cut the ciabatta loaf in half lengthwise.

  2. Heat the vegetable oil in a heavy skillet over medium-high heat. Add the sausage and the onion. Sauté the onion for 4 to 5 minutes, until it is softened.

  3. Add the tomato, pressing down so that it releases its juices. Add the mushrooms and bell pepper. Cook for about another 4 to 5 minutes, stirring, until the vegetables are tender but still crisp and heated through.

  4. Spread the mixture on one half of the ciabatta loaf. Top with the mozzarella cheese. Add the other half and close up the sandwich. Cut into four equal slices.

Freezing Shredded Cheese

The easiest solution for what to do with leftover shredded cheese is to freeze it. You can freeze shredded cheese for up to two months. Thaw the cheese in the refrigerator and use as soon as possible.
