Marshmallow Gelatin Dessert
For best results, make sure the cranberry juice is cold. To speed up the setting time, use a metal mold (gelatin sets more quickly in a metal container).

Cooking time: 5 minutes
Chill time: about 1 hour
1 envelope unflavored gelatin
4 tablespoons sugar
1 cup boiling water
½ cup cranberry juice
½ cup reserved pineapple juice
1 cup drained pineapple tidbits
1 cup mini marshmallows
In a medium mixing bowl, stir together the gelatin and sugar. Add the boiling water, stirring until the gelatin is fully dissolved.
Stir in the cranberry juice and reserved pineapple juice.
Pour into a bowl or serving mold. Chill until mixture has thickened but not completely set.
Stir in the pineapple and marshmallows
Continue chilling until fully set.

Did you know: Fresh pineapple is never used in gelatin desserts because it contains an enzyme, bromelain, that prevents gelatin from setting. However, canned pineapple is safe to use, since the enzyme is destroyed during the canning process.
