Make-Ahead Freezer Cookie Dough

The higher than usual proportion of butter to flour in this makeahead recipe helps keep the dough from drying out.

Yields about 48 cookies

Preparation time: 20 minutes

Chill time: at least 2 hours

2 sticks unsalted butter, softened

1 cup granulated sugar

1 tablespoon lemon juice

2 cups all-purpose flour

¼ teaspoon salt

½ cup dried cranberries

½ cup dried fruit and nut mix

  • In a large mixing bowl, cream together the butter and sugar. Blend in the lemon juice.

  • Using an electric mixer set at low speed, gradually add the flour and salt until you have a soft dough.

  • Gradually add the cranberries and dried fruit and nut mixture.

  • Roll the dough into two separate logs. Wrap each log firmly in plastic wrap and chill until ready to bake.
