Make-Ahead Freezer Cookie Dough
The higher than usual proportion of butter to flour in this makeahead recipe helps keep the dough from drying out.
Yields about 48 cookies
Preparation time: 20 minutes
Chill time: at least 2 hours
2 sticks unsalted butter, softened
1 cup granulated sugar
1 tablespoon lemon juice
2 cups all-purpose flour
¼ teaspoon salt
½ cup dried cranberries
½ cup dried fruit and nut mix
In a large mixing bowl, cream together the butter and sugar. Blend in the lemon juice.
Using an electric mixer set at low speed, gradually add the flour and salt until you have a soft dough.
Gradually add the cranberries and dried fruit and nut mixture.
Roll the dough into two separate logs. Wrap each log firmly in plastic wrap and chill until ready to bake.
