One-Dish Baked Chicken and Potatoes

You can turn the heat up or down on this dish by using a milder or hotter curry powder, as desired.

Cooking time: 15–18 minutes

INGREDIENTS | SERVES 4

  • 2 (10-ounce) cans cream of celery soup
  • ¼ cup milk
  • ½ teaspoon paprika
  • ⅛ teaspoon black pepper
  • 1 pound leftover cooked chicken or deli chicken, cubed
  • 1½ cups drained canned sweet potatoes
  • 1 tablespoon curry powder
  1. Preheat the oven to 250°F.

  2. Heat the soup and milk in a saucepan over medium heat until it is just boiling. Stir in the paprika and pepper.

  3. Place the chicken and sweet potatoes in a deep-sided casserole dish. Sprinkle the curry powder on top.

  4. Add the soup, stirring

  5. Bake for 10 to 15 minutes, until the chicken is heated through.
