Lemon Chicken with Broccoli Stir-Fry

Sweet brown sugar balances the tart flavor of lemon in this simple stir-fry. For extra flavor, add chicken or vegetable broth to the steaming water for the broccoli.

Cooking time: 15 minutes

1 pound chicken breast fillets

¼ teaspoon salt, or to taste

¼ teaspoon black pepper, or to taste

1 tablespoon oyster sauce

1 tablespoon soy sauce

2 tablespoons lemon juice

2 tablespoons chicken broth

2 teaspoons brown sugar

2 tablespoons olive oil

1 pound broccoli florets

  • Cut the chicken fillets into thin strips. Rub the salt and pepper over them to season.

  • In a small bowl, combine the oyster sauce, soy sauce, lemon juice, chicken broth, and brown sugar. Set aside.

  • Heat the olive oil in a skillet and add the chicken. Cook the chicken, turning once, for about 10 minutes, until it is browned and nearly cooked through. Remove the chicken from the pan.

  • While the chicken is cooking, steam the broccoli: place the broccoli florets on a metal steamer tray and steam in a medium saucepan over boiling water for 6 to 8 minutes, until they are tender but still crisp. Remove and drain

  • Add the cooked broccoli to the pan. Add the sauce and bring to a boil. Return the chicken to the pan. Stir to heat through and serve immediately.
