Lemon Chicken with Broccoli Stir-Fry
Sweet brown sugar balances the tart flavor of lemon in this simple stir-fry. For extra flavor, add chicken or vegetable broth to the steaming water for the broccoli.

1 pound chicken breast fillets
¼ teaspoon salt, or to taste
¼ teaspoon black pepper, or to taste
1 tablespoon oyster sauce
1 tablespoon soy sauce
2 tablespoons lemon juice
2 tablespoons chicken broth
2 teaspoons brown sugar
2 tablespoons olive oil
1 pound broccoli florets
Cut the chicken fillets into thin strips. Rub the salt and pepper over them to season.
In a small bowl, combine the oyster sauce, soy sauce, lemon juice, chicken broth, and brown sugar. Set aside.
Heat the olive oil in a skillet and add the chicken. Cook the chicken, turning once, for about 10 minutes, until it is browned and nearly cooked through. Remove the chicken from the pan.
While the chicken is cooking, steam the broccoli: place the broccoli florets on a metal steamer tray and steam in a medium saucepan over boiling water for 6 to 8 minutes, until they are tender but still crisp. Remove and drain
Add the cooked broccoli to the pan. Add the sauce and bring to a boil. Return the chicken to the pan. Stir to heat through and serve immediately.
