Lemon Chicken in a Rice Cooker
Steaming chicken breasts helps make them extra tender.
Serves 2
Preparation time: 10 minutes
Cooking time: 20–30 minutes
1¼ pounds chicken breast fillets
1 tablespoon dried rosemary
2 tablespoons lemon juice
2 tablespoons brown sugar
1 tablespoon oyster sauce
1 tablespoon soy sauce
2 tablespoons chicken broth
2 scallions, chopped
Cut any excess fat from the fillets. Cut the chicken breasts into bite-size cubes.
Place the chicken in the steamer and sprinkle the rosemary on top. Steam the chicken for 20 minutes, or according to the steamer directions.
While the chicken is steaming, bring the lemon juice, brown sugar, oyster sauce, soy sauce, and chicken broth to a boil over medium heat, stirring to dissolve the sugar.
Remove the chicken from the steamer. Pour the sauce over the chicken. Garnish with the chopped scallions.
