10-Minute Yogurt and Rice Pudding
Using instant rice means this simple pudding takes just over 10 minutes to make. Feel free to replace the peach yogurt with your favorite variety of yogurt, or to spice up the pudding by adding ½ teaspoon of ground cinnamon or nutmeg.
Serves 4
Preparation time: 2–3 minutes
Cooking time: 10 minutes
1 cup coconut milk
1 cup water
2 cups instant rice
¼ teaspoon salt
½ cup raisins
2 cups peach-flavored yogurt
Bring the coconut milk and water to boil in a medium saucepan.
Stir in the rice, making sure it is thoroughly wet. Stir in the salt.
Cover the saucepan and let stand for 5 minutes, or until the water is absorbed. Fluff up with a fork.
In a large bowl, combine the cooked rice with the raisins and peach-flavored yogurt. Serve immediately, or chill until ready to serve.
