This spiced milk drink from India is traditionally made with strong black tea.

INGREDIENTS | SERVES 3
- 2 cardamom pods
- 3 whole cloves
- 1½ cups water
- 1½ cups light cream
- 1 tablespoon granulated sugar
- ¼ teaspoon ground ginger
- 1 cinnamon stick, broken into pieces
- 2 bags Earl Grey black tea
Crush the cardamom and cloves with a mortar and pestle, or by rolling over them with a rolling pin.
In a medium saucepan, bring the water and cream to a boil. Add the sugar, stirring to dissolve.
Add the crushed spices, ginger, and cinnamon. Bring back to a boil.
Add the teabags, then remove the pan from the heat and let stand for 5 minutes. Strain and serve.
