Masala Chai

This spiced milk drink from India is traditionally made with strong black tea.

Preparation time: 5 minutes
Cooking time: 10 minutes

INGREDIENTS | SERVES 3

  • 2 cardamom pods
  • 3 whole cloves
  • 1½ cups water
  • 1½ cups light cream
  • 1 tablespoon granulated sugar
  • ¼ teaspoon ground ginger
  • 1 cinnamon stick, broken into pieces
  • 2 bags Earl Grey black tea
  1. Crush the cardamom and cloves with a mortar and pestle, or by rolling over them with a rolling pin.

  2. In a medium saucepan, bring the water and cream to a boil. Add the sugar, stirring to dissolve.

  3. Add the crushed spices, ginger, and cinnamon. Bring back to a boil.

  4. Add the teabags, then remove the pan from the heat and let stand for 5 minutes. Strain and serve.
