Herbed Steak with Marinated Vegetables
Not a fan of artichokes? You can use the basic marinade in Marinated Artichoke Hearts (page 229) to marinade other vegetables, such as baby carrots, to serve with the herbed steak.

Cooking time:15–20 minutes
¼ cup honey mustard
1½ teaspoons fresh chopped oregano
1½ teaspoons fresh thyme
½ teaspoon salt
½ teaspoon cayenne pepper
4 boneless sirloin steaks Marinated Artichoke Hearts (page 229)
Preheat the broiler.
In a small bowl, stir together the mustard, oregano, thyme, salt, and cayenne pepper.
Rub the spice mixture over the steaks.
Spray a rack with nonstick cooking spray. Place the steaks on the rack, about 4 inches from the heat source. For a medium-rare steak, broil for 12 minutes, turning over halfway during cooking
Let the steak stand for 5 minutes. Serve with the Marinated Artichoke Hearts (page 229).
Tender Beef
To ensure that beef remains tender during broiling, it's important not to overcook it. If the beef is not being marinated, lightly brush it with oil before placing it on the broiling pan. Turn the steak once during cooking.
