Chili con Queso Dinner

Adding sausage to classic Chili con Queso ingredients turns this into a complete meal. Serve with tortilla chips, or spoon onto crusty French or Italian bread.

INGREDIENTS | SERVES 4

  • 1 pound smoked pork sausage
  • 1 medium onion, chopped
  • 2 cups canned chopped tomatoes, with juice
  • 1 cup canned whole green chilies
  • 1 cup packaged shredded Monterey Jack cheese
  • ¼ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • ¼ cup sour cream
  1. Cook the sausage and onion in a skillet for about 5 minutes on medium heat, stirring occasionally, until the sausage is browned and the onion is softened.

  2. Add the tomatoes and green chilies. Cook for a couple of minutes, until the tomato is softened.

  3. Add the cheese and cook until the cheese is melted.

  4. Stir in the salt and pepper. Taste and adjust seasoning if desired

  5. Stir in the sour cream. Serve hot.
