Pita Paninis

Roasted red peppers are sold in jars in the condiment aisle of the supermarket. Drain them on paper towels before layering them in this sandwich.

SERVES 4

INGREDIENTS

  • 4 pita pocket breads
  • 3 tablespoons olive oil, divided
  • 2 tablespoons mustard
  • 6 ounces sliced cooked ham
  • 6 ounces sliced Muenster cheese
  • ½ cup sliced roasted red peppers, drained
  1. Heat dual-contact indoor grill. Using a sharp knife, split the pocket breads into 2 round pieces.

  2. In small bowl, combine 1 tablespoon olive oil and mustard and mix well. Spread this mixture on inside halves of the pita breads.

  3. Layer ham, Muenster cheese, roasted red peppers, and more Muenster cheese on one side of each pita bread. Top with remaining pita bread sides.

  4. Spread outside of sandwiches with remaining 2 tablespoons olive oil.

  5. Place each sandwich on dual-contact indoor grill and close the cover. Grill for 2 to 4 minutes, until cheese is melted and bread is golden brown and toasted.

  6. Cut sandwiches in half and serve.

Indoor Grills

If you like to make a lot of grilled sandwiches, buying a dual-contact indoor grill or panini grill is a good investment. They come in many different sizes, are nonstick for easy cleanup, and they heat up quickly. You can find some grills that are equipped with different surfaces to make patterns on the bread as it cooks.
