Orange Turkey Focaccia Sandwiches
The combination of warm, freshly baked focaccia and cold turkey filling is really wonderful. Serve with some carrots sticks and potato chips for a great lunch.
SERVES 4
INGREDIENTS
- 1 10-ounce container refrigerated pizza dough
- 2 tablespoons olive oil
- ½ teaspoon dried oregano leaves
- 2 cups cubed cooked Grilled Turkey Tenderloin
- ½ cup sour cream
- 2 tablespoons orange juice
- 1 green bell pepper, chopped
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Preheat oven to 350°F.
To make focaccia, unroll pizza dough and place on cookie sheet. Gently stretch to a 10″ × 12″ rectangle. Cut into eight 5″ × 3″ rectangles and separate slightly. Press fingers into dough to dimple.
In small bowl combine olive oil and oregano leaves and drizzle over dough. Bake for 14 to 18 minutes or until the focaccia pieces are light golden brown. Remove to wire racks.
Meanwhile, in medium bowl, combine turkey with remaining ingredients and blend well. Store in refrigerator while dough is baking, if necessary.
When dough is baked, make sandwiches with the turkey filling and two rectangles of the baked focaccia. Serve immediately.
Focaccia Substitutions
You can substitute any type of bread for the focaccia in this easy recipe. Split croissants; toast split English muffins; use whole grain bread slices, toasted or not; or try crusty French bread slices. The sandwiches made with bread slices can be grilled on a dual-contact indoor grill until crisp and brown.
