Muffuletta
Muffuletta sandwiches are layered sandwiches that use olivada, or olive paste, as a spread between layers of meats and cheeses. Make them ahead of time and refrigerate until it's time to eat.
SERVES 6
INGREDIENTS
- 1 12-inch focaccia flatbread
- ⅓ cup bottled olivada, drained
- ½ pound thinly sliced Fontina cheese
- ¼ pound thinly sliced smoked turkey
- ¼ pound thinly sliced salami
Cut focaccia in half horizontally to make two thin round pieces. Spread cut side of both pieces with some of the olivada.
Layer half of the Fontina cheese, a thin layer of olivada, smoked turkey, olivada, salami, olivada, and the rest of the Fontina cheese.
Replace top of focaccia and press sandwich together gently.
Cut into wedges and serve immediately, or wrap whole sandwich in plastic wrap and chill for up to 8 hours.
Make Your Own Olivada
Combine 1 cup mixed olives (Kalamata, green, black, cracked) with ¼ cup olive oil, a few cloves of garlic, some thyme or marjoram, and a bit of pepper in a blender or food processor. Blend or process until olives are chopped. Store, covered, in the refrigerator and use it for sandwich spreads or as an appetizer dip.
