Greek Pizza

Feta cheese, tomatoes, garlic, and olives give this pizza a Greek flair. Serve it with a simple spinach salad and Grape and Melon Salad.

SERVES 4

INGREDIENTS

  • 1 10- or 12-inch Boboli pizza crust
  • 1 cup pizza sauce
  • ½ teaspoon dried oregano leaves
  • 1 cup crumbled feta cheese with garlic and herbs
  • ½ cup sliced black olives
  • 2 cups shredded mozzarella cheese
  1. Preheat oven to 400°F.

  2. Place pizza crust on a cookie sheet and spread evenly with pizza sauce. Sprinkle with oregano.

  3. Arrange feta cheese and olives over sauce and top with mozzarella cheese.

  4. Bake for 10 to 16 minutes or until crust is hot and crisp and cheese is melted and beginning to brown. Serve immediately.

Feta Cheese

Feta cheese usually comes cut into small blocks and packed in a brine solution. You can find several different varieties of flavored cheese, including garlic and herbs, sun-dried tomato, plain, peppercorn, basil and tomato, and low fat. Don't drain the brine before you use the cheese, because it helps preserve the cheese.
