Curried Chicken Sandwiches
Keep this delicious sandwich spread in your refrigerator and let hungry teenagers make their own sandwiches! You could substitute pitted, halved cherries for the red grapes if you'd like.
SERVES 4–6
INGREDIENTS
- 2 cups cubed, cooked chicken
- ½ cup plain yogurt
- ⅓ cup chutney
- 1 teaspoon curry powder
- 1 cup red grapes, cut in half
- 3 pita breads, cut in half
In medium bowl, combine all ingredients except pita breads and stir well to combine.
Fill pita breads with chicken mixture and serve.
Cooking Chicken
To cook chicken breasts for use in any recipe, place boneless, skinless breasts in a pot and cover with half water and half canned chicken broth. Bring to a simmer, then reduce heat and poach chicken for 8 to 12 minutes, until chicken is thoroughly cooked. Let chicken cool in refrigerator, then chop. Reserve the broth for use in other recipes.
