Three-Bean Salad
Three-Bean Salad is typically marinated in a sweet and sour salad dressing. You can use any combination of beans you'd like, selecting from green beans, wax beans, kidney beans, chick peas, black beans, red beans, and soybeans.
YIELDS 6 cups
INGREDIENTS
- 2 cups frozen soybeans
- 1 15-ounce can green beans, drained
- 1 15-ounce can wax beans, drained
- ¾ cup red wine vinaigrette salad dressing
- 2 tablespoons red wine vinegar
- ⅓ cup sugar
- ¼ teaspoon dried tarragon leaves
- Dash black pepper
Bring large pot of water to a boil and cook frozen soybeans for 2 to 3 minutes, until tender. Drain and rinse with cold water.
Combine in serving bowl with green beans and wax beans.
In small saucepan combine salad dressing, vinegar, sugar, tarragon, and pepper; whisk over low heat until sugar is dissolved.
Pour over bean mixture and stir gently. Let stand for 10 minutes, then serve. Store leftovers in refrigerator.
