Apple and Greens Salad

You can make the dressing ahead of time, but be sure to prepare the apples just before serving, or they will darken.

SERVES 4

INGREDIENTS

  • ⅓ cup oil
  • 3 tablespoons apple cider vinegar
  • ¼ cup sugar
  • ½ teaspoon celery seed
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 2 apples, cored and sliced
  • 4 cups butter lettuce, torn into bite-sized pieces
  • 1 cup curly endive
  1. In small bowl, combine oil, vinegar, sugar, celery seed, salt, and pepper and mix well with wire whisk to blend.

  2. Place apples, lettuce, and endive in serving bowl and pour dressing over salad; toss gently to coat. Serve immediately.

Apple Varieties

Choose apple varieties according to whether you want a sweet or tart taste. Granny Smith apples are generally tart, while Golden Delicious and Red Delicious apples are sweeter. Gala apples have a sweet and honeylike taste, while Jonathans, McIntosh apples, and Cortlands are more tart.
