Ambrosia is an old-fashioned salad that is sweet and delicious. It always includes oranges and coconut along with a sweet whipped dressing; the rest is up to you!
- 1 8-ounce container frozen whipped topping, thawed
- ⅓ cup reserved pineapple juice
- 1 cup cottage cheese
- 2 14-ounce cans mandarin oranges, drained
- 1 15-ounce can crushed pineapple, drained, reserving juice
- 1 cup shredded coconut
In serving bowl, combine whipped topping, reserved pineapple juice, and cottage cheese; stir with wire whisk until blended. Fold in remaining ingredients.
Cover and chill for 15 minutes before serving. Store leftovers in refrigerator.
Whipped Cream or Frozen Topping?
You can use heavy cream, whipped until stiff with a few spoonfuls of powdered sugar, for the frozen whipped topping in this simple salad. If you are watching fat and calories, look for low-fat nondairy frozen whipped toppings in your grocery store's frozen-food aisle. Any frozen topping must thaw in the refrigerator for 6 to 8 hours.
