Skillet Pork Chops with Cabbage
Serve this hearty German feast with Smashed Potatoes and a molded gelatin salad. For dessert, make Chocolate Peanut Butter Pie.
SERVES 4
INGREDIENTS
- 3 tablespoons olive oil
- 1 red onion, chopped
- 4 smoked pork chops
- 3 cups shredded red cabbage
- 1 Granny Smith apple, peeled and chopped
- 1 cup apple juice
- ½ teaspoon dried thyme leaves
- ½ teaspoon salt
- ⅛ teaspoon pepper
Heat olive oil in large skillet over medium heat. Add red onion; cook and stir for 3 to 4 minutes, until crisp-tender.
Add pork chops; brown on both sides for about 3 minutes.
Add cabbage and apple to the skillet; cook and stir for 3 minutes.
Pour apple juice over all and sprinkle with thyme leaves, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 10 to 15 minutes, until cabbage is crisp-tender and pork chops are hot and tender. Serve immediately.
