Ham Curry

Serve this delicious, rich curry over hot cooked rice and pair it with Toasted Garlic Bread and a crisp mixed-lettuce salad with a honey mustard salad dressing.

SERVES 4

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1–2 tablespoons curry powder
  • 1 10-ounce container refrigerated Alfredo sauce
  • 1½ cups chopped Grilled Ham Steak
  • 1 cup frozen baby peas
  1. In large skillet, heat olive oil over medium heat. Add onion; cook and stir for 4 to 5 minutes, until onion is tender.

  2. Sprinkle curry powder over onions; cook and stir for 1 to 2 minutes, until fragrant.

  3. Stir in Alfredo sauce and bring to a simmer.

  4. Add ham and frozen baby peas and stir gently. Continue to cook over medium heat, stirring frequently, until sauce bubbles and ham and peas are hot. Serve immediately.

Curry powder combinations vary according to the cook, and in India, the spices included vary according to region. Some recipes call for simmering the curry in butter or oil before adding other ingredients. This technique really brings out the flavors and aromas of the complex mixture.
