Crispy Chicken Stir-Fry
Hot cooked rice is a must for this simple stir-fry recipe. Serve with chopsticks and some green tea for an authentic quick Asian meal.
SERVES 4
INGREDIENTS
- 2 fried deli chicken breasts
- 2 cups mixed salad vegetables from deli salad bar
- 2 tablespoons olive oil
- 1 onion, chopped
- ⅔ cup sweet-and-sour simmer sauce
Cut chicken meat off the bone; be sure to include some crisp skin on each piece. Set aside. If necessary, cut salad vegetables into uniform pieces.
In large saucepan or wok, heat olive oil over medium high heat. Add onion and salad vegetables and stir-fry for 4 to 7 minutes, until crisp-tender.
Add chicken pieces; stir-fry for 2 to 3 minutes, until hot.
Add simmer sauce and stir-fry for 3 to 5 minutes, until hot. Serve immediately.
