Raspberry Continental
Using premade and convenience foods means you can make this elegant dessert in just minutes! This is an excellent cake for a birthday celebration.
SERVES 9
INGREDIENTS
- 1 9-inch round or square yellow cake layer
- 1½ cups powdered sugar
- ⅓ cup butter, softened
- ⅓ cup seedless raspberry jam
- ¾ cup whipping cream
- 3 tablespoons powdered sugar
Using a serrated knife, carefully cut the cake horizontally through the middle to make two thin layers.
In small bowl, combine 1½ cups powdered sugar with butter, beating until light and fluffy. Stir in raspberry jam.
Spread this mixture on the bottom cake layer and carefully top with the top layer.
In small bowl combine whipping cream and 3 tablespoons powdered sugar; beat until stiff peaks form. Frost top and sides of cake with cream mixture.
Serve immediately or cover and chill in refrigerator for 2 to 3 hours. Store leftovers in refrigerator.
Garnishes
Garnishes make even purchased desserts look homemade. Use one of the ingredients from the recipe to make a garnish. Grated chocolate works well on any chocolate dessert, place fresh raspberries or strawberries on a dessert made with fruit, and mint sprigs look beautiful on any dessert topped with whipped cream.
