No-Bake Apple Cookies

The pectin in the apple helps thicken the cookie mixture without baking. Store these cookies in an airtight container at room temperature.

YIELDS 48 cookies

INGREDIENTS

  • ½ cup butter
  • 1½ cups sugar
  • ½ cup brown sugar
  • 1 cup grated peeled Granny Smith apple
  • ½ teaspoon cinnamon
  • 3 cups quick-cooking oatmeal
  • 1 cup chopped walnuts
  • ½ cup powdered sugar
  1. In heavy saucepan, melt butter with sugars over medium heat, then stir in apple. Bring to a boil, then stir and boil for 1 minute.

  2. Remove from heat and add cinnamon, oatmeal, and walnuts; stir to combine. Let stand for 5 minutes.

  3. Place powdered sugar on shallow pan. Drop apple mixture by teaspoons into powdered sugar and roll into balls.

  4. Place on waxed paper and let stand until the cookies are firm.
