No-Bake Apple Cookies
The pectin in the apple helps thicken the cookie mixture without baking. Store these cookies in an airtight container at room temperature.
YIELDS 48 cookies
INGREDIENTS
- ½ cup butter
- 1½ cups sugar
- ½ cup brown sugar
- 1 cup grated peeled Granny Smith apple
- ½ teaspoon cinnamon
- 3 cups quick-cooking oatmeal
- 1 cup chopped walnuts
- ½ cup powdered sugar
In heavy saucepan, melt butter with sugars over medium heat, then stir in apple. Bring to a boil, then stir and boil for 1 minute.
Remove from heat and add cinnamon, oatmeal, and walnuts; stir to combine. Let stand for 5 minutes.
Place powdered sugar on shallow pan. Drop apple mixture by teaspoons into powdered sugar and roll into balls.
Place on waxed paper and let stand until the cookies are firm.
