Cereal Caramel Chews
These easy bars are crunchy and full of flavor, perfect for after-school munching or for a great treat in a lunch box. You could top them with butterscotch chips or semisweet chocolate chips instead.
YIELDS 16 bars
INGREDIENTS
- ½ cup corn syrup
- ½ cup brown sugar
- 1 cup crunchy peanut butter
- 3 cups cornflakes
- 1 cup milk chocolate chips
Grease a 9” pan with butter and set aside.
In heavy saucepan, combine corn syrup and brown sugar. Cook over medium heat until mixture boils, stirring frequently. Let boil for 2 minutes, stirring constantly.
Remove from heat and add peanut butter; stir until melted.
Add cornflakes and stir gently, then spread into prepared pan. Press down with back of a greased spoon to form an even surface.
Place milk chocolate chips in small microwave-safe bowl. Microwave at 50 percent power for 1 to 1½ minutes, remove from oven, and stir until chips are melted.
Pour over cereal mixture and spread; let cool. Cut into bars.
Storing Brown Sugar
Brown sugar can dry out and develop hard lumps if not stored properly. Decant the sugar from its plastic bag into a hard-sided container with a tightly sealing lid. You can put some foil on the sugar and place a bit of damp paper towel on the foil to keep the sugar moist. Change the paper towel when it dries out.
