Candied Nuts
Candied nuts are a wonderful snack to have on hand for the holiday season; they also make great gifts packaged in decorative tins or glass jars.
YIELDS 3 cups
INGREDIENTS
- 1 cup brown sugar
- ½ cup sugar
- >⅓ cup orange juice
- 3 tablespoons butter, melted
- 1 teaspoon vanilla
- 3 cups mixed nuts
Preheat oven to 350°F. Grease a large cookie sheet with butter and set aside. Grease 2 large sheets of foil with butter and set aside.
In large bowl, combine brown sugar, sugar, orange juice, melted butter, and vanilla and mix well. Add nuts and toss to coat.
Spread onto prepared cookie sheet. Bake for 10 to 15 minutes or until nuts are dark golden brown and sugar mixture bubbles. Stir nuts twice during cooking time.
Immediately place nuts onto buttered foil, spreading thinly. Let cool, then break nuts apart before storing in airtight container.
Storing Nuts
Many nuts should be stored in the freezer before use, because the oils they contain can turn rancid quickly at room temperature. Pour the nuts into a freezer container such as a heavy-duty resealable freezer bag or a hard-sided plastic container, label, and freeze up to 6 months.
