Green Chili Chicken Burritos

Serve these easy burritos with salsa and guacamole. A mixed fruit salad would be a nice addition to the meal, with a bakery apple pie for dessert.



  • 2 9-ounce packages grilled chicken strips
  • 1 4-ounce can chopped green chilies, drained
  • 1 cup sour cream
  • ¼ teaspoon cayenne pepper
  • 6 flour tortillas
  • 1½ cups shredded Pepper Jack cheese, divided
  1. Preheat oven to 400°F. In microwave-safe bowl, combine chicken strips and green chilies. Microwave on medium power for 2 to 3 minutes, stirring once during cooking time, until ingredients are hot. Stir in sour cream and cayenne pepper.

  2. Divide mixture among the tortillas. Sprinkle with 1 cup of the cheese.

  3. Roll up to enclose filling. Place in 2-quart casserole dish and top with remaining cheese.

  4. Bake for 7 to 11 minutes, until cheese melts and burritos are hot.

Spice It Up

There are lots of ingredients you can use to add spice to your food. Canned chopped green chilies, jalapeño peppers, salsas, taco sauce, and chili powder are all good choices. You can also use cayenne pepper, Tabasco sauce, fresh chilies like habañeros and Anaheim peppers, and ground dried chilies.
