Greek Chicken Stir-Fry

Stir-fry with a twist! These ingredients add spark and great flavor to a typical chicken stir-fry. Serve over steamed rice, prepared instant couscous, or hot cooked noodles.

SERVES 4

INGREDIENTS

  • 1 pound boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 cups frozen bell pepper and onion stir-fry
  • 2 tablespoons lemon juice
  • ½ cup crumbled feta cheese
  1. Cut chicken breasts into 1-inch pieces and sprinkle with salt and pepper. Heat olive oil in a wok or large skillet over medium-high heat.

  2. Add chicken and garlic and stir-fry until chicken is cooked, about 4 to 5 minutes. Remove chicken and garlic to plate with slotted spoon and set aside.

  3. Add frozen vegetables to skillet and stir-fry for 5 to 7 minutes until hot and crisp-tender. Add chicken to skillet and sprinkle with lemon juice. Stir-fry for 1 minute longer.

  4. Sprinkle with feta cheese, remove pan from heat, cover, and let stand for 2 to 3 minutes longer to melt cheese. Serve immediately.
