Toasted Garlic Bread

This crisp bread is perfect to serve alongside spaghetti and meatballs and a tender baby spinach salad. Make extra pieces and refrigerate; use the leftovers to make Bread-Crumb Frittata.

SERVES 6

INGREDIENTS

  • 1 loaf French bread
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • ½ cup butter
  • 1 teaspoon lemon pepper
  • ½ cup grated Cotija cheese
  1. Slice bread about ¼ inch thick. In a heavy skillet, heat olive oil over medium heat and sauté garlic until soft and fragrant, about 2 to 3 minutes.

  2. Pour oil and garlic into medium bowl and let stand for 10 minutes. Add butter, lemon pepper, and Cotija cheese and mix well.

  3. Preheat broiler. Spread butter mixture onto both sides of each piece of bread. Place on cookie sheet and broil 6 inches from heat source for 3 to 5 minutes, until light brown.

  4. Turn and broil for 2 to 3 minutes on second side, until light brown and crisp. Watch carefully, as these can burn easily. Serve hot.
