Bread-Crumb Frittata

This excellent and easy recipe is a wonderful way to use up any leftover bread; simply toast it and crush it by placing in a plastic food bag and rolling it with a rolling pin.

SERVES 4

INGREDIENTS

  • 5 slices Toasted Garlic Bread
  • 3 tablespoons butter
  • 1 onion, finely chopped
  • 8 eggs, beaten
  • ½ teaspoon salt
  • Dash black pepper
  • 1 cup grated Italian-blend cheese
  1. Preheat broiler. Crush Toasted Garlic Bread into fine crumbs and set aside.

  2. In a heavy ovenproof skillet, melt butter over medium heat. Add onion and cook until tender, about 4 to 5 minutes. Season eggs with salt and pepper and add to skillet and stir.

  3. Cook eggs for 2 minutes, lifting edges to let uncooked mixture flow underneath, until eggs begin to set. Add bread crumbs. Continue cooking, shaking pan occasionally, until eggs are almost set but still moist.

  4. Top with cheese and place under broiler for 2 to 3 minutes, until cheese melts and eggs are set. Cut into wedges and serve immediately.
