Pressure-Cooker Beef Goulash
The pressure cooker makes beef tender and delicious in minutes. Serve this hearty dish over hot cooked buttered noodles with a spinach salad.

INGREDIENTS
- 2 pounds beef round steak
- 3 tablespoons flour
- 1 teaspoon salt
- ⅛ teaspoon pepper
- 1 tablespoon sweet paprika
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 russet potatoes, chopped
- ½ cup water
- 2 8-ounce cans tomato sauce with roasted garlic
- 1 cup sour cream
Cut steak into 1-inch pieces. In small bowl, combine flour, salt, pepper, and paprika. Sprinkle over beef cubes and rub into meat.
Heat olive oil in pressure cooker; add beef and brown on all sides, stirring frequently, about 3 to 5 minutes. Meanwhile, prepare the onion and potatoes.
Add onion and potatoes to pressure cooker along with water and tomato sauce. Lock the lid and bring up to high pressure.
Cook for 12 minutes, then release pressure using quick-release method. Test to be sure potatoes are tender; if not, lock lid and cook for 2 to 3 minutes longer. Then release pressure, stir in sour cream, and serve over hot cooked noodles or mashed potatoes.
