Beef and Tortellini
This simple dish is packed full of flavor. Serve it with some grated Parmesan cheese, a green salad with lots of tomatoes, and some sautéed broccoli.
SERVES 4
INGREDIENTS
- 1 pound ground beef
- 1 onion, chopped
- 1 16-ounce package frozen beef-filled tortellini
- 1 10-ounce jar four-cheese Alfredo sauce
- 1 9-ounce container refrigerated pesto
Bring a large pot of water to boil over high heat. Meanwhile, in large saucepan, cook ground beef and onion over medium heat, stirring to break up meat, for 4 to 6 minutes, until beef is browned. Drain well. Cook tortellini in boiling water according to package directions, until tender; drain well.
Combine beef mixture, cooked and drained tortellini, and Alfredo sauce in large saucepan and cook over medium heat for 5 minutes, stirring occasionally, until mixture is combined and sauce bubbles.
Stir in pesto, cover, remove from heat, let stand for 5 minutes, and serve.
