Toffee Rocky Road Drops
Dried cranberries and toffee baking bits add a sophisticated twist to traditional Rocky Road candies.
INGREDIENTS | YIELDS 4 DOZEN CANDIES
- 1 (12-ounce) package semisweet chocolate chips
- 1 (11.5-ounce) package milk chocolate chips, divided
- 1 (1-ounce) square unsweetened baking chocolate
- 1 cup dried cranberries
- 2 cups chopped walnuts
- 1 cup toffee baking bits
- 2 cups salted peanuts
- 3 cups miniature marshmallows
In medium saucepan, combine semisweet chocolate chips and 1 ½ cups milk chocolate chips with baking chocolate. Melt together over low heat, stir until smooth.
Remove from heat and stir in remaining ½ cup milk chocolate chips, stirring constantly, until smooth.
Stir in remaining ingredients just until mixed. Drop by tablespoons onto waxed paper–lined cookie sheets. Let stand until firm.
This is another candy recipe you can vary by using different types of chocolate. Also think about mixing it up by drizzling the set candies with contrasting chocolate. If you use white chocolate chips for the base of the candy, drizzle the finished creations with dark chocolate, and vice versa.
