Mango Salsa

Cool and fruity, this salsa uses “slow” sugar to make it sweet without causing dumping syndrome. It also features fresh fruits and vegetables, which add fiber to your diet in a tasty way.

INGREDIENTS | YIELDS 4 PORTIONS

2 tablespoons honey

3 tablespoons lime juice

1 tablespoon ginger, minced

1 fresh mango, peeled and diced

½ cup cantaloupe, peeled, seeded, and diced

¼ cup red onion, diced

¼ cup red bell pepper, diced

1 English cucumber, diced

1 bunch cilantro

Combine all ingredients and mix well. Can be served immediately, but has better flavor if refrigerated overnight.
