Mexican Pizza

This kid-friendly pizza is easily assembled from ingredients that you might have on hand. Leftover roast chicken can be simmered in taco seasoning.

Makes one 9 × 13-inch pizza

INGREDIENTS

  • 1 can refrigerated pizza crust dough
  • 1½ cups mild salsa
  • 3 cups refried beans, warmed to soften
  • 2 cups taco-seasoned shredded or ground chicken
  • 4 cups shredded Mexican cheese blend
  1. Lightly grease a baking sheet. Unroll pizza crust and stretch to cover the pan.

  2. Spoon salsa over the crust and allow children to spread with a spoon or sauce brush. Spoon warm refried beans over the sauce in several spots and lightly press with the back of a spoon to spread.

  3. Top the beans with chicken, then add the cheese in handfuls over the pizza.

  4. Bake at 400° for 12 to 15 minutes or until crust is browned and cheese melted. Let stand for 10 minutes before cutting and serving.
