Fruit Pizza Turnovers

For a thicker crust, try this recipe with frozen bread dough.

Makes two 9-inch turnovers

INGREDIENTS

  • 1 roll refrigerated pizza dough
  • 2 cups ricotta cheese
  • ½ cup sugar
  • 2 teaspoons vanilla
  • 1 large can apple or cherry pie filling
  • Confectioners' sugar
  1. Unroll pizza dough on a work surface and stretch to a 9 × 18-inch rectangle. Slice rectangle in half and turn halves to form two 9-inch diamonds.

  2. Whisk together ricotta cheese, sugar, and vanilla. Spoon cheese mixture onto the bottom half of the diagonals, leaving a half inch at the edges bare. Spoon fruit pie filling over the sweetened ricotta.

  3. Turn top half of dough over the filling and pinch around the edges to seal.

  4. Place turnovers on a baking sheet lined with nonstick foil. Bake at 350° for 12 to 14 minutes or until crust is lightly browned. Remove from oven and sprinkle turnovers with confectioners' sugar. Let stand to cool slightly before serving.
