Chocolate Ganache
Use your favorite brand of chocolate candy bar to make this sauce. If desired, a small amount of liqueur can be added to the melted chocolate mixture.
Makes 3 cups
INGREDIENTS
- 1 cup heavy cream
- 1 tablespoon butter
- 2⅓ cups finely chopped dark chocolate
Combine cream and butter in a heavy saucepan. Place chopped chocolate in a dry, heatproof bowl.
Bring cream and butter to a boil, then immediately pour over the chocolate. Let stand for 3 to 5 minutes.
Whisk melted chocolate and cream until smooth. Use as directed in recipes.
Glorious Chocolate
Ganache is essentially chocolate melted in cream. For a light, free-flowing sauce, use equal parts chocolate and cream. For a sauce that's more substantial or that can be used as a coating for candy or cakes (or as a base for dessert pizza), increase the percentage of chocolate. To get a glossy coating, add a little butter or corn syrup to the mix. Use top-quality eating chocolate, not baking chocolate or chocolate chips, to make the best ganache.
