Grilled Focaccia Pie
Buy flat, round loaves of focaccia at your favorite bakery or specialty bread store. This is a super-easy recipe for impromptu entertaining.
Makes two 12-inch pies
INGREDIENTS
- 2 baked focaccia loaves
- 1½ cups Pesto Sauce
- Vegetable oil
- 1 cup roasted red pepper strips
- ½ cup toasted pine nuts
- Freshly ground black pepper to taste
- 2 cups shredded Asiago cheese
Place focaccias on a work surface. With a serving fork, pierce several holes in the top. Slowly spoon half the pesto over each loaf, allowing some of the sauce to seep into the holes in the bread.
Prepare a gas or charcoal grill so the cooking surface is medium-hot. Brush the grill rack with vegetable oil. Layer roasted pepper strips and pine nuts over each focaccia loaf and sprinkle with Asiago cheese. Slide both loaves onto the grill rack. Close the lid immediately and grill for 3 to 5 minutes, or until grill marks appear on the loaf and cheese is melted.
Remove from heat. Cool slightly, cut into wedges, and serve with wine and cocktails.
