Cookie Pizza Crust

This recipe makes only one thick dessert pizza cookie. If you need more, make a separate batch for each pizza. Doubling the recipe produces uneven results.

Makes crust for one 12-inch pizza


  • 1 cup butter, softened
  • ¾ cup white sugar
  • ¾ cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2¼ cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup each dark, milk, and white chocolate chips
  1. In a large bowl, cream butter with a mixer on medium speed. Add sugars and vanilla and beat until fluffy. Beat in eggs, one at a time, until well blended.

  2. Combine flour, salt, and baking soda and stir with a whisk to break up any lumps. Slowly add to butter mixture and beat until well blended. Lightly stir in chocolate chips.

  3. Press dough into a 12″ pizza pan and bake at 375° for 30 minutes. Remove from oven and let cool in pan. Top as desired.

Dessert in a Hurry

If you're in a rush, do what mothers have been doing for decades: buy refrigerated cookie dough at the supermarket. Pick sugar cookie or chocolate chip dough, spread it into a pizza pan, and bake until just done. You'll get that great cookie-crust smell and minimal mess.
