Cookie Pizza Crust
This recipe makes only one thick dessert pizza cookie. If you need more, make a separate batch for each pizza. Doubling the recipe produces uneven results.
Makes crust for one 12-inch pizza
- 1 cup butter, softened
- ¾ cup white sugar
- ¾ cup brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2¼ cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup each dark, milk, and white chocolate chips
In a large bowl, cream butter with a mixer on medium speed. Add sugars and vanilla and beat until fluffy. Beat in eggs, one at a time, until well blended.
Combine flour, salt, and baking soda and stir with a whisk to break up any lumps. Slowly add to butter mixture and beat until well blended. Lightly stir in chocolate chips.
Press dough into a 12″ pizza pan and bake at 375° for 30 minutes. Remove from oven and let cool in pan. Top as desired.
Dessert in a Hurry
If you're in a rush, do what mothers have been doing for decades: buy refrigerated cookie dough at the supermarket. Pick sugar cookie or chocolate chip dough, spread it into a pizza pan, and bake until just done. You'll get that great cookie-crust smell and minimal mess.
