Quiche-Crust Pizza
Don't confuse evaporated milk with condensed milk. Condensed milk is sweetened, evaporated isn't.
Makes one 12-inch pizza
INGREDIENTS
- 8 eggs
- 4 egg whites
- 1 cup evaporated skimmed milk
- 1 green onion
- ¼ cup chopped parsley
- Salt and pepper to taste
- 1 cup shredded sharp
- Cheddar cheese
- 2 cups grape tomatoes, halved
- 1 cup diced ham
- ½ teaspoon dried oregano
- 2 cups shredded part-skim mozzarella cheese
Place eggs, egg whites, evaporated milk, green onion, parsley, salt, and pepper in a blender. Blend until parsley and green onion are puréed and eggs are frothy.
Pour into a lightly greased 12" deep pizza or quiche pan. Sprinkle with Cheddar cheese.
Bake crustless quiche at 350° for 15 minutes. Remove from oven and top with tomatoes, ham, oregano, and mozzarella cheese.
Return to oven for 10 minutes or until cheese has melted. Let stand 10 minutes before cutting into wedges.
