Triple-Chocolate Pizza
Grate good-quality chocolate bars by hand or with a food processor fitted with a large-hole shredding blade. However, make sure the chocolate is cold or the friction will cause it to melt while grating.
Makes two 12-inch pizzas
INGREDIENTS
- ½ recipe Chocolate Crust dough
- 1 tablespoon melted butter
- 3 cups Chocolate Ganache
- 3 cups coarsely grated white chocolate
- 1 cup coarsely grated milk chocolate
Roll or press pizza dough into two 12-inch circles, slightly thicker at the edges than in the center. Coat pizza pans with melted butter and place dough in the pans.
Bake dough at 375° for 20 minutes. Remove from oven and allow to cool. Remove crusts from pans and place on serving platters.
Spread 1½ cups ganache evenly over each pizza. Allow pizzas to cool to warm room temperature.
Sprinkle grated chocolate evenly over each pizza and serve immediately.

A freshly baked chocolate pizza crust is a wonderful thing. But if you're a chocolate purist, you can always melt your favorite chocolate bars — eating-quality chocolate, not baking chocolate — and pour the chocolate into a 12″ nonstick pizza pan. Let it cool and harden, then top this pure chocolate “crust” with frosting and your favorite candies.
