Pineapple Pizza

Your favorite pineapple upside-down cake just got flatter, simpler, and a little more intense.

Makes two 12-inch pizzas

INGREDIENTS

  • ½ recipe Sweet Crust dough
  • 3 tablespoons melted butter
  • 2 cups brown sugar
  • 24 fresh pineapple rings
  • 1 cup pitted cherries
  • 1 cup shredded coconut (optional)
  1. Roll or press pizza dough into two 12-inch circles, slightly thicker at the edges than in the center. Coat each pizza pan with ½ tablespoon melted butter and place dough in the pans. Brush dough with remaining butter.

  2. Top each pizza with half the brown sugar. Layer 12 pineapple rings over each pizza and dot with half the cherries.

  3. Bake pizzas at 375° for 20 minutes. Remove from oven and let stand for a few minutes.

  4. Sprinkle with shredded coconut, if desired. Serve warm.

Pineapple Particulars

Fresh pineapple contains an enzyme that keeps gelatin from getting firm. The same enzyme, papain, is also found in papaya and it's often used as a meat tenderizer. To use pineapple in dishes thickened with gelatin, be sure to use canned pineapple. The cooking and canning process neutralizes the papain.
