Chocolate Peanut Butter Pizza

Think of this pizza as the best chocolate peanut butter cup you've ever tasted.

Makes two 12-inch pizzas

INGREDIENTS

  • ½ recipe Chocolate Crust dough
  • 1 tablespoon melted butter
  • 3 cups smooth peanut butter
  • ½ cup heavy cream
  • 1 cup Chocolate Ganache
  • 2 cups coarsely grated white chocolate
  • 1 cup coarsely grated milk chocolate
  • 1 cup chopped peanuts
  1. Roll or press pizza dough into two 12-inch circles, slightly thicker at the edges than in the center. Coat pizza pans with the melted butter and place dough in the pans.

  2. Bake dough at 375° for 20 minutes. Remove from oven and allow to cool slightly. Remove crusts from pans and place on racks to cool completely. Transfer to serving platters.

  3. Warm peanut butter in the microwave and stir in heavy cream until smooth. Spread half the peanut butter evenly over each pizza.

  4. Drizzle ½ cup warm Chocolate Ganache over each pizza. Allow pizzas to cool, then top with grated chocolate and sprinkle with chopped peanuts. Cut in wedges with a sharp knife.

Going Nutty

Although peanut butter is the classic, you can find cashew butter, almond butter, hazelnut butter, and even macadamia butter at most natural foods stores and some supermarkets. Any one can be used in place of peanut butter to add variety to recipes. If you can't find your favorite nut in butter form, just process whole or blanched nuts in your food processor with a tablespoon of peanut or almond oil.
