Scrabble Night Pizza Casserole

Think of this as lasagna on a crust. If you want to pile on a few more toppings, consider chopped spinach or diced pepperoni.

Makes one 9 × 16-inch pizza

INGREDIENTS

  • ½ recipe Sicilian Crust dough
  • 2 tablespoons olive oil
  • 2 tablespoons cornmeal
  • 2 cups Slow-Simmered Tomato Sauce
  • 2 cups cooked ground beef
  • 1 cup cooked bulk Italian sausage
  • 1 onion, minced
  • 1 small green bell pepper, cored and diced
  • 1 cup ricotta cheese
  • Salt and black pepper to taste
  • 1 cup shredded Parmesan cheese
  • 2 cups shredded mozzarella cheese
  1. On a floured board, roll pizza dough into a rectangle. Coat a deep, oblong baking dish with olive oil and sprinkle with cornmeal. Press dough into the pan, spreading it to the corners.

  2. Spread tomato sauce over the top of the dough. In a bowl, combine beef, sausage, onion, and bell pepper. Layer over the sauce. Dot ricotta cheese over the pizza by the teaspoonful. Grind black pepper over sauce to taste.

  3. Combine Parmesan and mozzarella cheeses. Spread evenly over the top of the pizza. Preheat oven to 400°. Bake 20 to 25 minutes or until top is browned and bubbly. Serve with forks and plenty of napkins.
