Pizza Canapés I and II

These canapés offer a pleasant alternative to cheese on crackers. If you're not a fan of seafood, diced ham and chunks of grilled chicken can be substituted.

Makes 24 canapés

INGREDIENTS

  1. Divide dough in half, then break each half into twelve pieces. With fingers, flatten each bit into a tiny pizza crust. Line two baking sheets with nonstick foil.

  2. Place 12 dough circles on each baking sheet. Brush tops lightly with olive oil and bake at 350° for 10 minutes or until lightly browned.

  3. Allow crusts to cool. Spread twelve with Cheesy Cream Sauce and top each of those with lump crabmeat. Sprinkle parsley on top and place six on each of two serving platters.

  4. Spread remaining crusts with Pesto Sauce. Place a shrimp in the center of each and sprinkle with minced basil. Place six on each serving platter and serve.

When hosting a party, try not to load all the food onto one table, forcing everyone to crowd around. Instead, encourage good party flow and mingling by creating several small islands of food — a tray here, a tray there. And never put the bar next to the main buffet.
