Cheese Mini-Pizzas for Cocktails
Your guests will go crazy for these tasty minis.
Makes 24 pizzas
INGREDIENTS
- ½ recipe Classic Crust dough or Whole-Wheat Crust dough
- 3 tablespoons olive oil
- 1 cup Slow-Simmered Tomato Sauce
- 2 cups shredded mozzarella cheese
- 1 cup shredded Asiago cheese
- 1 cup shredded Gouda cheese
- 1 cup shredded Gruyère cheese
- Salt and pepper to taste
Divide dough in half, then break each half into twelve pieces. Flatten each bit into a tiny pizza crust. Line two baking sheets with nonstick foil.
Place twelve dough circles on each sheet. Brush tops lightly with olive oil and bake at 350° for 5 minutes.
Spread crusts with a small amount of tomato sauce. Combine shredded cheeses. Divide cheese over pizzas, then sprinkle with salt and pepper to taste.
Return pizzas to oven and bake for 6 to 8 minutes. Remove from oven and set aside briefly to cool before serving.
