Pita Pizza

Hummus makes a great, unexpected topping for these herb-laced pizzas. If you want a full Mediterranean experience, add a little tabbouleh to the toppings.

Makes four 6-inch pizzas

INGREDIENTS

  • 4 white or whole-wheat pita loaves
  • 1 cup prepared pesto sauce
  • 1 cup prepared hummus
  • 4 cups shredded mozzarella cheese
  1. Place whole pita loaves, uncut, on a baking sheet lined with nonstick foil. Spread pesto sauce over each loaf.

  2. With a small spoon, place little dabs of hummus over each loaf and lightly press with the back of the spoon to spread.

  3. Sprinkle a cup of cheese over each loaf. Bake pita pizzas at 350° for 10 minutes until cheese is melted and pitas are toasty. Let stand for a few minutes before serving. Allow one pita pizza per person.
