What's “quick” and what's “easy” depends on who's doing the cooking-except with pasta. Staling into the refrigerator wondering what to make for supper can take longer than boiling water, cooking a handful of fettuccine, and tossing it with butter, salt, and Parmesan. A cupboard with a variety of pastas, a few cans of Italian tomatoes, pine nuts, basil, tuna fish, garlic, ham, and a piece of cheese is more than a good start. There are recipes here that can practically be made in the dark and others that can be served to guests. Deciding what's quick and easy enough is up to the cook.
