In this chapter, lasagna is paired with lobster, ravioli meets wild mushrooms and truffles, cannelloni encircles crawfish, and pasta strips roll up with red pepper coulis. Although the excellence of a basic lasagna or of cheese-filled ravioli is irreplaceable, new ingredients add interest to the stuffed and layered pasta forms. When pasta is used as a wrap or casing both the fillings and the noodles are enhanced, each imparting its flavor and texture to the other until the two become inseparable and the recipe becomes far more than the sum of its parts.
