Roast Beef and Provolone Panini

Roast beef isn't just for the meat and potatoes crowd. You can make some fancy roast beef panini with the addition of the right ingredients; in this case provolone cheese, arugula, and horseradish mayonnaise. You'll want a big crunchy roll for this panini.

INGREDIENTS | SERVES 1

  • 1 roll or 2 thick slices crusty bread
  • about ¼ pound roast beef
  • Salt and pepper, to taste
  • 2 slices provolone cheese
  • ¼ cup fresh arugula, shredded
  • 3 tablespoons Horseradish Mayonnaise
  1. Preheat the panini press. Place 1 slice of bread or bottom half of roll on counter.

  2. Layer sliced roast beef on bread. Sprinkle with salt and pepper, and then add provolone cheese and arugula.

  3. Spread horseradish mayonnaise onto top half of roll or bread and close the sandwich.

  4. Place on panini press, close lid, and cook for 3–5 minutes.

  5. Remove from press, cut in half, and serve warm.

Provolone

Provolone goes great with fruity white wines, antipasto, and of course, panini. High quality provolone is good enough to eat alone as a snack.
